This lemon chicken and asparagus stir-fry is a quick and easy weeknight dinner that is full of flavor. The tangy lemon sauce pairs perfectly with the tender chicken and crispy asparagus, making it a healthy and satisfying meal. Serve it over rice or quinoa for a complete meal.



    for 3 servings

    • ½ tablespoon olive oil
    • 2 boneless, skinless chicken breasts, sliced
    • 1 teaspoon kosher salt
    • ½ teaspoon freshly ground black pepper
    • 1 tablespoon minced garlic
    • 4 oz asparagus(100 g)
    • ½ lemon, zested, plus more for garnish
    • ½ lemon, juiced
    • 3 tablespoons soy sauce
    • cooked rice, for serving


    1. Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.
    2. Add the asparagus, lemon zest, and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
    3. Serve the stir-fry over rice with more lemon zest on top.
